Continue the series of vegetable dishes with this goodness with potatoes and other healthy vegetables. It's also made at Multicooker because I love to cook in this machine, especially this summer.
- a large onion
- 1 green pepper
- 1 red
- 2 carrots
- o vanata
- 1/2 large zucchini or a smaller zucchini
- 6 potatoes
- 1 teaspoon sea salt
- a little pepper
- 1/2 teaspoon red pepper
- a bunch of green parsley
- 2-3 tablespoons oil
- a glass of water
Preparation time: less than 90 minutes
RECIPE PREPARATION Vegetable stew:
We clean and wash the vegetables.
Turn on the appliance, put the oil in the bowl and select the Fry function for 15 minutes.
Saute finely chopped onion and pepper in hot oil. Add the peeled and diced tomatoes, then the diced eggplant and zucchini and let it harden a little.
Next are diced carrots and potatoes.
Add a teaspoon of salt and pour a glass of water over the vegetables.
If the 15 minutes have elapsed, close the lid and select the Stew function (1 hour).
10 minutes before the end of the program, add the paprika and a little pepper.
At the end of the program, add the finely chopped parsley.
We turn off the appliance and serve hot food with fresh tomatoes.
